Avacado Shrimp Salad





Avocado Shrimp Salad
Lime juice and cilantro are the key ingredients to creating this wonderful, healthy salad you’ll want to make all summer long. Made with raw shrimp that was sauteed and seasoned. You can use cooked if you like.
Ingredients

  • 1/4 cup chopped red onion
  • 2 lemons, juice of
  • 1/4 cup of olive oil
  • 1/4 tsp kosher salt, black pepper to taste
  • 1 lb raw shrimp, seasoned, cooked and chopped
  • 1 medium tomato, diced
  • 1 medium zucchini, diced
  • 1 medium avocado, diced 
  • 2 tbsp chopped cilantro
  • 3 cups of romaine lettuce or spring mix

  • Directions

  • In a bowl combine red onion, lemon juice, olive oil, salt and pepper. Let them marinate at least 5 minutes to mellow the flavor of the onion.
  • saute your shrimp with salt, pepper, garlic powder, onion powder and paprika
  • In a large bowl combine the chopped shrimp, avocado, tomato and zucchini
  • Combine all the ingredients together, add cilantro and gently toss. Adjust salt and pepper to taste.
