Ricotta Cookies


Ricotta Cookies


Ingredients
1/2 cup butter2/3 cup erythritol or stevia
1 egg2/3 cup ricotta cheese2 teaspoons vanilla extract1 teaspoon almond extract2 cups almond flour1 teaspoon baking powder1/2 teaspoon baking soda

Icing(optional)
2 tablespoons almond milk1/2 cup powdered erythritol or stevia
1/2 teaspoon almond extract

Instructions
  1. In a mixing bowl, cream together butter, sweetener, eggs, ricotta cheese, and extracts.
  2. In a separate bowl, combine the almond flour, baking powder, and baking soda.
  3. Add the dry flour mix into the creamed mixture until dough forms.
  4. Drop onto Silpat lined baking sheet using a cookie dough scoop.
  5. Bake 15 to 18 minutes at 350 °F until lightly browned. Place cookies on racks to cool.
  6. Store cookies in the refrigerator

Icing
Stir almond milk, powdered erythritol, and almond extract until smooth.
Brush or drizzle over cookies to frost.

Today here on a Sunday its gloomy and raining. I am scrapping away and got an email from someone with awesome news. I could not believe they are asking me to join thier awesome staff. All I can say, I am blessed in many ways for my awesome husband, my beautiful kids, my family, the wonderful friends I have online and that surrond me. So further a do.....
