Ricotta Cookies
Ingredients
1/2 cup butter2/3 cup erythritol or stevia
1 egg2/3 cup ricotta cheese2 teaspoons vanilla extract1 teaspoon almond extract2 cups almond flour1 teaspoon baking powder1/2 teaspoon baking soda

Icing(optional)
2 tablespoons almond milk1/2 cup powdered erythritol or stevia
1/2 teaspoon almond extract
Instructions
- In a mixing bowl, cream together butter, sweetener, eggs, ricotta cheese, and extracts.
- In a separate bowl, combine the almond flour, baking powder, and baking soda.
- Add the dry flour mix into the creamed mixture until dough forms.
- Drop onto Silpat lined baking sheet using a cookie dough scoop.
- Bake 15 to 18 minutes at 350 °F until lightly browned. Place cookies on racks to cool.
- Store cookies in the refrigerator
Icing
Stir almond milk, powdered erythritol, and almond extract until smooth.
Brush or drizzle over cookies to frost.
